When the doctor told me I had Type II Diabetes, I wasn't surprised. I had gained weight since the loss of my Dad, a divorce and the loss of a dear friend. Eating eased the pain, and I needed some relief. I should have spoken to my doctor and allowed him to help me out during that time. However, hindsight is 20-20, and I just failed to see it coming.
So, in my 50's I developed diabetes. The doctor told me I would need to change the way I was cooking baking, and change my cooking recipes. Once I got over the initial shock, I became determined to beat this disease and become as healthy as possible.
