About this time of year, when many of us are house bound and trapped indoors for long periods of time, we foodies turn to baking to fill the hours with enjoyable activity and great food. I was treated to this very simple recipe at a gather of financial advisors. They had a dessert bake-off and this thing won hands down. When I asked for the recipe, I was shocked at how very simple this is.
Coconut Lopez Cake
1 yellow cake mix
can of sweet condensed milk (14 oz)
can a coconut lopez
1 to 1 ½ containers of cool whip ( I use 1 ½)
coconut flakes
Directions:
Bake the yellow cake let it cool
After it cools take a wooden spoon and use the handle to make holes in the cake
Take the sweet milk and pour over the cake and into the holes
Repeat with the Coconut Lopez
Then top with the cool whip and coconut flakes
Chill until you are ready to eat
