One thing I do a lot of during the summer is barbecue. I try to use healthy cooking recipes when cooking on my barbecue. I admit I sometime find barbecue cooking recipes for beef and pork that are far from a healthy cooking recipes but it just tastes so good I give in occasionally. But for the most part my cooking recipes I use when cooking outside on my charcoal barbecue/smoker or gas barbecue grill are of the healthy variety. I like to use fresh vegetables from the garden I grow in many of my cooking recipes. One favorite of the family is to select the right size squash or zucchini and slice this into one quarter inch slices. I use aluminum foil for this particular cooking recipes favorite so the slices  do not fall between the grill. Coat the foil with a generous amount of extra virgin olive oil, cover the grill with the foil, and place the squash slices on. Wait until the charcoal has burned down to a hot but even heat before beginning this cooking recipes. Once the squash slices are beginning to cook I like to sprinkle with various spices including minced onions, garlic salt, and any other seasonings you prefer. Let this slowing cook until it is brown and then turn. Repeat the seasonings and add a touch of your favorite cheese. Delicious and very health cooking recipes for a barbecue appetizer. Next time I will give up my secret for a mouth watering zucchini boat made with a filling of meat's, cheese's, a special homemade tomato sauce, onions, garlic, parsley, and spices. It has become a favorite of everyone who has tried it. But bring a big appetite before making this delectable delight!
