It’s Friday and the weekend is coming up.  Now, if you are like me, there are two things that you want for the weekend almost without fail.  I want some great food and for someone else to make it.  Only teasing!  I love to cook, but I do love to find the simple stuff for Friday.  Lately, I’ve seen a lot of the pro chefs on TV and the Web talking about making ravioli with won-ton wrappers.  That’s why they are pros.  This is a great tip!

You can find won-ton wrappers at just about any grocery store.  Wonder of wonders, they are little noodle squares.  Can you make better ones if you get out your equipment and hand make noodles?  Of course!  However, these are really good.  The only issue is that they are really thin and rather delicate, so be a bit careful and keep them sealed until you are ready to use them.  When they dry, they are useless (except to fry for chips, which ain’t bad either).

You can put anything in these little babies.  You can fold them over.  You can use two and sandwich them.  You can put anything in them (just make sure it’s on the dry side and don’t over stuff).  I really like chorizo and peppers for a filling (finely chopped and cooked before stuffing).  Put that in a light, smoky Ancho chili cream sauce (a jar of good Alfredo sauce and some Ancho chili powder makes this a cinch) and you’ve got the start of a Friday afternoon party on the fly.
