My friend Kevin Hartland, Managing Partner with Texas National Recruiting, dropped me a note by email yesterday in response to the one pot meal posting yesterday. Goodness knows with his job and his wife teaching 3rd graders, thay have precious little time during the week for elaborate meal preparation. They have a number of these really quick meals that they use to keep thier three youngster fed and happy. Kevin shares an old college recipe with us that helped him in his college days and now, when they need a delicious quick fix. Thanks Kev!
TUNA FISH CASSEROLE:
1) Standard box of mac and cheese, cook according to directions.
2) In another bowl, 1 can of solid white tuna, 1 can cream of mushroom soup, ½ onion chopped, 1 jar sliced mushrooms, 1- 1-1/2 stalks celery chopped, 1-2 cups cheddar cheese. Mix together and combine with MAC-N-CHEESE, transfer to a greased 9x13 casserole dish, sprinkle more cheddar cheese over top and bake at 350 for 30-40 mins. until top begins to brown and everything is heated through.
GREAT COLLEGE DISH, GOOD FOR 2 -3 DAYS WORTH OF MEALS.
