Tuesday during the Holiday season brings the ads in droves.  I just went to my mail box and I thought I was going to have to have a sled dog to bring the load back to the house.  Sheesh!  The email box was no better.  I can’t blame these folks for trying their best.  It’s a very important time of the year for retailers of all kinds.  Did you know that some stores make more than half of their yearly income during this period? 

In any case, it’s a lot to go through in the morning and nothing will help like a good cup of coffee and some awesome coffee cake.  Later on in the year, I will bring you some recipes for scratch building these bastions of comfort and sharing.  However, during this very busy season, now is not the time to be spending more time in the kitchen than necessary. There's shopping to do! You can make a great coffee cake type treat from already prepared puff pastry and premade filling and have it done in time to enjoy while you roll through those mountains of valuable, can’t miss offers that your friend, the store’s marketing department, saw fit to send.  I took this right of of the www.cooks.com site and am publishing it here because it is so good.  I hope everyone is in the spirit of sharing!  It’s worth it.

KATIE'S DANISH PUFF COFFEE CAKE

 

1 c. sifted flour
1/2 c. butter
2 tbsp. water
1/2 c. butter
1 c. water
3 eggs
1 tsp. almond flavoring

1. Mix first three ingredients together as for pastry. Divide. Pat into two long strips on cookie sheet.

2. Bring butter and water to a boil. Remove from heat and add 1 cup flour, stirring until combined. Add singly 3 eggs, stirring in each. Add almond flavoring. Spread on pastry. Bake at 350 degrees for one hour.

3. Frost with simple confectioners' sugar glaze flavored with almond extract. Sprinkle sliced almonds on top.

Now, this particular recipe doesn’t call for the prepared puff pastry that our friends at Pillsbury make so well.  I have eliminated the first three ingredients and replace the Step 1 instructions with “Take thawed Pillsbury Frozen puff pastry out of the box and cut into strips.  Grease a cookie sheet (Pam works fine.) and layout the strips to bake strips."

Then just proceed with the rest of the directions.  This is good and really quick.  However, If you want to get really fast, just use preserves on the strips.  Kind of press the middle down so it won’t run off the pastry.  This result is really quick and surprisingly great.
