For my Christmas dinner I will be serving a family favorite in the bread and rolls category. That would be cornbread. I have found cooking recipes for healthy eating even during the holidays. Let me share my recipe for a healthy cornbread. 

COOKING RECIPES INGREDIENTS FOR HEALTHY CORNBREAD:

Butter flavored cooking spray
Two cups self-rising cornmeal mix
Two tablespoons sugar
One tablespoon brown sugar
One and a half cups 1% milk
One beaten egg
One tablespoon canola oil
Half diced red pepper
One fifteen ounce can corn - drained
Eight ounces fat free cream cheese

COOKING RECIPES DIRECTIONS FOR HEALTHY CORNBREAD:

Preheat oven to 425 degrees. Spray a cast iron skillet or an 8 x 8 square baking dish with cooking spray. In a medium bowl mix cornmeal, sugars, milk, egg and canola oil until well blended. Stir in pepper, corn and cream cheese. Pour into skillet and bake for 25 minutes until golden brown. Makes eight servings. 

This cooking recipes cornbread is easy to put together. My kids often take on this task while I prepare the rest of the meal. It is great when served with ham and scalloped potatoes. It could become a new family favorite in your home too!
